Things are Going Great but I (28F) Feel Like I'm Dating a Ghost (30M)

I've gone on several dates with this guy that I met in real life (not through an app) about a year ago, in the past month. We haven't defined the relationship yet, and I don't really feel any pressure to. Right now we're enjoying each other's company, and having fun getting to know each other. We're both in our late 20s.
Like I said, we've gone on four dates, and both times he was really attentive, never on his phone, and seemed like he loved being around me. And me too! I can tell that he's someone who prefers to relate to people in person rather than through technology, as he always jumps at my suggestions (or suggests himself) to hang out. However, when I text him about anything else ("how was your day?", "you'll never guess what happened today", etc) he either replies instantly or takes days and days to respond. There's no inbetween. There was a small stretch right after the whole "establishment of mutual feelings" thing where he didn't respond to my text for a week. A whole week!
I'm not crazy about texting either, but he lives a few hours away so I want to talk to him. I'll, at the most, send him a "hey how's it going" text every other day, but never send multiple texts if he doesn't respond right away. I'm not desperate for his attention, and while I would like to talk to him, I understand that he's busy and can forget to reply to texts right away.
Anyway, we both started planning something last week for tomorrow. I sent him a text two days ago to make a concrete plan (time, place, etc) and he hasn't responded yet. This is kind of unusual, because when it comes to making plans he's usually punctual about responding and doesn't leave me hanging, so to speak. It's a little bit upsetting because it's been a while since I've seen him, and I feel like he's ignoring me, again.
First of all, for this specific situation, should I send a follow up text after the "hey, we're doing [activity] on Friday, right?" text? Like, "hey, what's the plan?". I'm usually okay with him not responding to something random that I send him, but this relates to seeing each other in person and requires a bit more commitment and communication.

Keep in mind, he's the one who suggested this activity, so it's not like he's not interested anymore. He always jumps at the chance to meet up, but shows a lot of disinterest toward casual texting of any kind.

Overall, it's hard to keep conversations with him because he usually takes so long to respond. The instantaneous response thing usually happens for about a half hour before he disappears again. I think we both like each other (though we haven't talked about it in a while) and I would like to continue the relationship, but communication is super difficult with him falling off the face of the earth for days and days at a time. Should I be clear with him and put my foot down about communicating with me or just accept that texting is a no-go for him?
It's not really my prerogative as someone who he just has mutual feelings with (not official or even hooking up) to tell him to text me back, so I don't really know what to do.
He really is like a ghost, and I hate the uncertainty about whether or not I'm going to hear from him.

TLDR; guy I'm casually dating takes days and days to respond to my texts but shows interest otherwise. We were just scheduling something but he hasn't responded in two days so I don't know what to do and if I should send a follow-up text.
