Why would he (24M) ghost me (22F) after giving me mono? How do I move on?

I (22F) met this guy (24M), let's call him Bob, on the dating app Hinge back in October and we went on a few dates. The first date was pretty meh and I thought we wouldn't go on another one. But we did go on a second date and slept together (initiated by him). I was basically a virgin at this time so I wasn't expecting that to happen. After a few dates, he confessed that he was not interested in an actual relationship for various reasons (just got out of a relationship, has commitment issues, doesn't want to disappoint me, is unstable due to having bipolar II, etc) and says we should start off as friends and take things slow. Well we ended up continuing to do relationshippy things. Thinking about making it official but worried it might be too soon?

The advice I’ve found online is that asking the person you’re seeing to be your girlfriend before a month is too fast. But my current relationship with this girl I’ve been seeing has been going super super fast. We met 2 weeks ago and I think we’ve probably spent close to if not more than 100 hours together. She constantly wants to be at my place, do stuff together, go to parties, PDA, talked about almost everything, kinks etc etc. and we text every day multiple times. In short, this feels special and she is totally girlfriend material. We are going to a really fancy event next week where I’ll be in a three piece and she’ll be in a sexy dress, they’re will probably be slow dancing and I just think that would be an unmissable opportunity to pop the question. Her birthday is also two days after. Only problem is at that point we will have been dating eachother for almost 3 weeks. This week we are doing stuff almost everyday leading up to the event.
