What does "emotionally unavailable" mean to you?

So I've been hanging out with this guy the last month or so. I gave him my contact info at work in case he had any further questions, and email turned into text, which turned into coffee. Coffee turned into ~6 instances of biking, hiking, and camping, with nothing physical happening between us, so I finally asked him what we were doing. I was just confused because he'd pay for the coffees, etc. and refuse gas money, and he usually texts me early in the morning. Both of those things I reserve for romantic interests, not friends/activity partners.

He was up front and said that he's thought about hooking up with me but that he's emotionally unavailable right now, which is cool, but what does that even mean? He still texts me throughout the day, we still make plans to hang out... He even was willing to cancel his plans with his mom on Tuesday if I wanted to camp again. That's just confusing, too, because if I'm emotionally unavailable, I'm not going to cancel already-made plans to hang out with a new person?

Please help decipher. :)

My (23M) girlfriend (25F) relationship is confusing to me. I might be the problem, or maybe we are just incompatible.

I met my girlfriend after a few serious breakups that led me to change both intentionally and unintentionally over a few years. For better and for worse. She had just gotten out of an engagement with a verbally and physically abusive man who had a cocaine problem. We have been together about 8 months now.
