CONFUSED! if the guy takes hours to respond to a text, is he still interested?

I(25F) have been seeing this guy (31M) for a few months, we hung out sometimes, went to the movies and had dinner, which he paid, however we never kissed or anything, even though he seems interested. Our conversations are really interesting and I really enjoy being with him but when we text, he sometimes takes hours (or days!) to respond! I started to think that this was clearly a sign that he wasn't into me, but sometimes, out of nowhere he texts me asking about my day and trying to make small talk, but he still takes hours to answer - even when he is the one that started the conversation! On the other day he asked me to have dinner a few weeks from now, I said yes and a couple of days later he stopped texting...

I am very confused and don't want to make a fool of myself (again), what should I do? Do I keep talking to him? I don't want to be "that girl" that is nagging him even though we aren't a thing but I can't deal with this uncertainty. I'm starting to really like his guy and this is killing me.. I have very low self-esteem and I 'm very shy and, given my dating history, I really don't want to be a joke.

My (27f) gf (27f) is getting tired of me not sharing intimate/ personal info about me

I’ve always been extremely private and introverted. My (23M) girlfriend (25F) relationship is confusing to me. I might be the problem, or maybe we are just incompatible.

I met my girlfriend after a few serious breakups that led me to change both intentionally and unintentionally over a few years. For better and for worse. She had just gotten out of an engagement with a verbally and physically abusive man who had a cocaine problem. We have been together about 8 months now.
