Why does she stare/look at me a lot but doesn't accept my request on instagram?

Well the title pretty much says it all... There's this girl who works at a grocery story I visit a lot. Mostly when i'm walking around in the grocery store I noticed her looking at me, but in a sneaky way. Mostly after I paid for like some food or other small groceries I'll just sit down outside and relax and enjoy the nice weather, there's this spot in front of the building and I noticed she keeps looking at me while she's working when i'm just sitting there (sometimes i'm with a friend but she never looks at him.) Obviously there's some distance since she's inside and i'm outside and there's glass between us. Anyway, she always stares/looks at me when I go there but when she's done working she walks past me with earphones in and doesn't look at me (she kinda looks awkward while walking past me). I do know her name since she's the younger sister of a girl I kind of know (her sis works there as well) The thing is, i'm a shy guy and I guess kinda social awkward and I don't even know if she stares in a bad or good way. I told my friends about it and one of them said just follow her on IG, so I send her a request... Which she deleted after 2 days. She keeps staring at me and from what I could tell she doesn't look disgusted (since that always comes up to me at first, "well she probably finds me weird or something") but as I said, I don't know what she thinks of me. I do remember her staring at me a few weeks ago and it seriously looked like her mouth just kinda fell open but i'm not sure tho.. She's a really pretty girl.. I don't know what I should do, should I talk to her?

I’ve always been extremely private and introverted. My (23M) girlfriend (25F) relationship is confusing to me. I might be the problem, or maybe we are just incompatible.

I met my girlfriend after a few serious breakups that led me to change both intentionally and unintentionally over a few years. For better and for worse. She had just gotten out of an engagement with a verbally and physically abusive man who had a cocaine problem. We have been together about 8 months now.
