Dating when you don’t drink?

I’ve slowly given up drinking because I noticed it’s bad for my mental health. And I was recently diagnosed with bipolar disorder and am on meds that have bad interactions with alcohol. Thus, I don’t drink at all anymore.

In the past, all my first dates have started with drinks. But now I’m not sure how to handle this suggestion. I can still agree to drinks and then just order something non-alcoholic when I get there (I still like going to bars) but I don’t want to seem like I tricked the guy or anything ya know? Not sure if I should mention it ahead of time. I just know that drinking is a big part of most peoples social lives and I don’t want to seem like a wet blanket or someone they can’t have fun with.

I know there are alternatives like coffee, walks, etc but drinks just seems to be the go-to.
