As a Spanish speaker whose 2.5rd language is English, I can confirm I struggled with saying they with a singular person, mostly because in order to communicate I made the phrase on Spanish in my mind and then did a raw translation, and that works sometimes, but not for every situation, once I managed to get more used to both, common slang and grammar, it because easier and thus, saying they to a singular person didn't felt weird anymore.

So yeah, I can kinda understand your mother on that, is just a matter of time until she realizes is more common and even correct to use it that way.
