Is she a realistic option?

I (21M) met this girl (20F) on Bumble a week ago, and our conversation went really well on there. I ended up asking for her number but she added me on Snapchat instead because she said she doesn't like giving her number out. So we talked on there and asked if she was free this weekend which she said she's going home to a wedding but she's usually free on weekdays. I offered to meet at the park which she said yes to and so we ended up meeting there yesterday. Everything was great from the time we met to when everything was over. I tried being confident the entire time and was friendly to the families walking by us. We had conversations about school, work, etc. and she seemed comfortable being around me. In fact, she couldn't stop taking her eyes off me. She laughed and smiled at pretty much everything I said, and it was just good vibes all around. We didn't get real touchy or flirty, the only time she touched me was when I had a piece of grass on my shoulder and she got it off for me. Towards the end of the date, we walked over to a bridge with a nice pond and I asked if I can kiss her. She tried to be funny and asked if I ate peanut butter beforehand because she's allergic to peanuts and I said no I promise. We kissed for a good 5-10 seconds and headed back to our cars. The following morning (today) I texted her saying I really enjoyed my time last night and would like to go out again sometime. She said yeah I enjoyed my time as well. Then I checked her profile again on Bumble and now it shows that she's on snooze mode, so maybe there's a chance she's just focusing on me right now? Either way, I was over the moon after that date and definitely thought she was attractive.

She is interning nearby, which explains why we matched. She has one more year of college left, and I just graduated and started living here for the next 12 months. Her college is 2 and a half hours away, as well as her hometown. Her lease for her apartment is up next month when she goes back to college, so I should probably try seeing her as much as I can now before she leaves. Am I making a mistake by thinking this could turn into anything serious? I don't mind seeing her like once or twice a month while she's in school, but any more than that is going to be pretty taxing on my mental health.
