How do I gauge her interest in dating?

Hey all, late-20s guy here whose last date was several years ago. No need to say it, I know I'm rusty :) There's a cute co-worker who's moved to my city and joined our office recently, and she has been on my mind ever since. She's bubbly, easy to talk to, and hazel eyes that are easy to get lost in. Since she's on my team we've had a chance to interact more frequently than others in the office. I've been helping her out getting oriented both at the office, with work, and being a newcomer to the town. I'm very interested in getting to know her better, and not just as colleagues.

Not going to bore you with the details, but earlier this week, some things fell into place and on this weekend I'm taking her out to coffee in the morning, followed by her giving me an introductory lesson in needle stitching. This will be the first time that we spend a significant amount of time together outside of work. In what ways can I gauge if she's open to dating? What questions can I ask? What signs and info should I look out for?

And if it turns out she is interested, how do I ask her out? (you see all those bits of rust coming off me right now? :D) The biggest caveat of course is that we work together, in a very technical field and professional environment. I don't want to come across as that creepy guy who preys on fresh hires. I'm prepared for rejection, but I just want to ask her out in a way that doesn't put too much pressure on her, and allows for a clean break back to being just colleagues.
